- 1 Dozen Martin’s eggs
- Salt & Pepper
- 1 ½ cup shredded cheese
- 12 slices of ham or pork roll
Preheat the oven to 350°. Place slices of ham in the bottom of muffin pan. Crack your eggs on top, sprinkle with salt and pepper, and shredded cheese. Gently stir cheese into eggs. Bake for 20 minutes. After removing them from the oven, let sit for 30 minutes to cool. Then use a spoon to remove them, and store in a sealed container. (These can be stored in the refrigerator for up to a week.) When you want a quick breakfast, place them on an English muffin and heat for about 1 minute in the microwave. It’s great having a healthy breakfast ready in no time.
