Healthy Granola Bars

  • 2 Martin’s eggs, beaten
  • 2 cups brown sugar
  • ¾ cup oil
  • ¾ cup creamy peanut butter
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 4 cup oatmeal
  • 1 cup mini chocolate chips
  • 1 cup flaked coconut (Hint: if you do not like coconut pieces, you can chop it in a food processer, before adding to the recipe.)

Mix together first 6 ingredients thoroughly; add remaining ingredients and mix well. Press into an ungreased 11×15-inch pan. Bake at 375°F for 15 minutes. Cool for 5 minutes; cut and remove from pan. Enjoy your healthy snack!!
